Thanksgiving desserts


Here are two great Thanksgiving dessert recipes that sound amazing. Please send us your holiday recipes to our Ag Editor, Loni Just at agnews@pleasantonexpress.com and they will be featured in our Farm and Ranch section.

Pumpkin Bread
2 1/2 cup flour
2 cups sugar
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 tsp. salt
4 eggs
3/4 cup oil
1/2 cup water
2 cups mashed pumpkin
1 cup chopped pecans

Preheat the oven to 325 degrees. Grease 9”x5” loaf pan. Combine dry ingredients. Add in eggs, oil and water and mix. Add in pumpkin and mix. Fold in nuts. Bake in loaf pan at 325 degrees for 1 1/2 hours. Makes two loaves.

You can also bake mini loaves or muffins at 350 degrees for about half the time or until they pass the toothpick test. Thank you, Melissa Theis

Maple Spice Oatmeal Cookies

1 cup sugar
1 cup brown sugar
1 cup shortening
2 eggs
1 tsp. vanilla
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
2 cups oatmeal
1 envelope maple spice
oatmeal
1 cup pecans

Preheat the oven to 425 degrees. Cream together sugars and shortening. Add eggs and vanilla and mix. Add flour, baking soda and baking powder and stir until completely incorporated. Stir in oatmeal and pecans. Roll into round balls and place on a cookie sheet. Mash slightly with glass dipped in sugar. Bake at 425 degrees for 8-9 minutes or until lightly brown.
