Summertime salad for Dad
I thought for the next few summer months that I would share a recipe every now and then. And since Father’s Day is this Sunday, this may appeal to your dear old dad.
My dad loved cantaloupe and cucumbers, but we never made a salad with both ingredients together. His favorite salad was cukes, onion, tomatoes and a light vinaigrette that was lightly sweetened with a LOT of black pepper.
Since it has been so hot, this recipe came to mind the other day. It is from H-E-B’s Health and Wellness series and was featured a couple of years ago.
The fresh melon with crisp cucumbers and basil comes together with a white balsamic dressing. And, as luck would have it, H-E-B is advertising in this week’s insert organic baby seedless cucumbers (2 -16 oz. bags for $5). I simply love these baby cukes. They are mild and crisp. This recipe calls for Feta cheese, but I have left it out before and it is still quite yummy. This recipe makes four servings.
Cantaloupe and Cucumber Salad
Ingredients:
2 Tbsp Alessi White Balsamic Vinegar
1 1/2 Tbsp H‑E‑B 100% Pure Olive Oil
1/8 Tsp salt
1/8 Tsp pepper
1 cantaloupe, cubed
2 hot house cucumbers, halved lengthwise, then sliced (If you use the baby cukes, you may wish to prepare 3 of them)
3 Tbsp H‑E‑B Reduced Fat Crumbled Feta Cheese
1 Tbsp fresh basil, chopped
Instructions:
Prepare vinaigrette: In a bowl, whisk balsamic vinegar, slowly adding olive oil to combine. Salt and pepper to taste.
In a large bowl, combine cantaloupe, cucumber, feta cheese, and basil.
Drizzle vinaigrette over salad and toss to combine. Chill until ready to serve.
The way I see it, try to keep cool these hot days and eating light makes us feel a bit better, right?
