We tend to eat a lot of bird in our house. Chicken and turkey to be exact.

A couple of months ago we cut back on the red meat and only have it if we venture out to a restaurant. So at the house I use a lot of ground turkey and chicken breast.

I ran into a recipe for Crispy Cheddar Chicken on Pinterest which is usually where I find them. It’s just nice and easy to find them there. I picked it because I had all the ingredients with one exception. I didn’t have any sour cream. I don’t like to keep sour cream in the house ‘cause then I’m just looking for stuff to put sour cream on so I can use it all before it goes bad. LOL I have issues.

The recipe itself was simple enough. There was only one thing that bothered me. It called for the chicken to be dredged (I actually knew what this meant and didn’t have to look it up LOL) in milk then dipped in shredded cheddar cheese then into crushed Ritz crackers. My problem was that a lot of the crackers and cheese is wasted. After dunking all my pieces and getting them good and coated there was what I felt a whole bowl left of cheese. I didn’t want to just throw it out, but what else can I do with it now that it has chicken germs all over it. Not like we could eat it. This goes for the cracker crunchies too. I’m thinking that next time, I cut the amount that is called for so I don’t have to throw so much away. It hurts me to have to dump all that food.

The cooking time was perfect for this recipe. I didn’t have to put it back in the oven to make sure it was cooked. The prep was easy and so was the clean up.

The chicken was delicious. It smelled “great” as my husband told me. It had a nice crispy crust and a great flavor. I served it with steamed broccoli and homestyle mac and cheese.

The sauce was a little odd. It tasted fine, but I didn’t like the texture. To me it was clumpy and had an odd texture. I do have texture issues though. There’s a whole list of things I won’t eat ‘cause the texture bothers me. I’m odd.

I just felt like it was no big deal. It calls for sour cream and butter to be added to cream of chicken soup. I really didn’t taste anything, but cream of chicken. Eh. Not great. Perhaps I did something wrong. I double checked my recipe to make sure that the amounts were correct and as far as I could tell I did it right. Then I start freaking out ‘cause maybe I was supposed to add the milk to the soup before adding everything else, but my husband took a look at the directions and read it the same way I did. If anyone knows if I was supposed to add the milk/water to it please let me know. I would love to make this again, but have the sauce at its best.

Not sure what I’ll try next week. Right now I’m leaning toward easy kid snacks.
